Belgian Croquettes aux Crevettes Grises, or Gray Shrimp Croquettes, are a beloved delicacy often served as an appetizer in Belgian cuisine. These croquettes are crispy on the outside and creamy on the inside, filled with a rich mixture of tiny gray shrimp, béchamel sauce, and seasonings. Here’s how to make this classic Belgian dish at home.

Ingredients:

  • For the Filling:
    • 300g (10.5 oz) gray shrimp (peeled and cooked)
    • 50g (1.8 oz) butter
    • 50g (1.8 oz) all-purpose flour
    • 300ml (1.25 cups) milk
    • 100ml (0.5 cups) fish stock
    • 1 small shallot, finely chopped
    • 1 tablespoon lemon juice
    • 2 tablespoons fresh parsley, chopped
    • Salt and pepper to taste
  • For the Coating:
    • 2 eggs, beaten
    • 100g (3.5 oz) all-purpose flour
    • 100g (3.5 oz) breadcrumbs
  • For Frying:
    • Vegetable oil for deep frying

Instructions:

  1. Prepare the Filling:
    • In a saucepan, melt the butter over medium heat. Add the finely chopped shallot and cook until softened.
    • Stir in the flour to make a roux, cooking for about 2 minutes.
    • Gradually whisk in the milk and fish stock, stirring constantly until the mixture thickens into a smooth béchamel sauce.
    • Remove the pan from the heat and stir in the gray shrimp, lemon juice, and fresh parsley. Season with salt and pepper to taste.
    • Spread the mixture into a shallow dish and let it cool completely in the refrigerator for at least 2 hours or until firm.
  2. Shape and Coat the Croquettes:
    • Once the filling is firm, shape it into small logs or balls.
    • Dredge each croquette in flour, dip it into the beaten eggs, and then roll it in breadcrumbs to coat evenly.
    • Place the coated croquettes on a baking sheet and refrigerate for another 30 minutes to set.
  3. Fry the Croquettes:
    • Heat vegetable oil in a deep fryer or large pot to 180°C (350°F).
    • Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch.
    • Remove with a slotted spoon and drain on paper towels.
  4. Serve:
    • Serve the croquettes hot, garnished with lemon wedges and fresh parsley. They are perfect as an appetizer or a light main course.
