Belgian Tomates aux Crevettes (Tomato Stuffed with Shrimp)

Tomates aux Crevettes, or Tomato Stuffed with Shrimp, is a classic Belgian appetizer that combines fresh tomatoes with a creamy shrimp filling. This light and flavorful dish is perfect for summer and is often served as a starter or a light main course. Here’s how you can make this delightful Belgian dish at home.

Ingredients:

  • 4 large tomatoes
  • 300g (10.5 oz) gray shrimp (peeled and cooked)
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Lettuce leaves for serving (optional)

Instructions:

  1. Prepare the Tomatoes:
    • Cut the tops off the tomatoes and scoop out the seeds and pulp, being careful not to break the outer shell. You can use a spoon or a melon baller for this.
    • Lightly season the inside of the tomatoes with salt and turn them upside down on a paper towel to drain while you prepare the filling.
  2. Make the Shrimp Filling:
    • In a bowl, combine the cooked shrimp, mayonnaise, lemon juice, and chopped parsley. Mix well until the shrimp are evenly coated.
    • Season with salt and pepper to taste.
  3. Stuff the Tomatoes:
    • Gently spoon the shrimp mixture into the hollowed-out tomatoes, packing it in well. Replace the tops of the tomatoes if desired.
  4. Serve:
    • Arrange the stuffed tomatoes on a plate lined with lettuce leaves for a decorative touch.
    • Serve chilled, and enjoy this refreshing and flavorful Belgian appetizer.
