Belgian waffles are a beloved treat worldwide, known for their light and crispy texture with deep pockets perfect for holding toppings like whipped cream, fresh berries, and syrup. There are two main types of Belgian waffles: Brussels waffles and Liège waffles. Brussels waffles are lighter and crispier, while Liège waffles are denser and sweeter due to the use of pearl sugar. Here’s how to make the classic Brussels waffles at home.

Ingredients:

  • 250g (8.8 oz) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 large eggs, separated
  • 240ml (1 cup) milk
  • 120ml (1/2 cup) water
  • 120ml (1/2 cup) melted butter
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
    • In a separate bowl, beat the egg yolks, then add the milk, water, melted butter, and vanilla extract. Mix well.
    • Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Beat the Egg Whites:
    • In another bowl, beat the egg whites until stiff peaks form.
    • Gently fold the beaten egg whites into the batter, being careful not to overmix. This will help keep the waffles light and airy.
  3. Cook the Waffles:
    • Preheat your waffle iron according to the manufacturer’s instructions.
    • Grease the waffle iron with a little butter or non-stick spray.
    • Pour an appropriate amount of batter into the waffle iron and cook until golden brown and crispy, usually about 5 minutes.
  4. Serve:
    • Serve the waffles immediately, topped with your favorite toppings such as whipped cream, fresh berries, syrup, or powdered sugar.

These classic Brussels waffles are perfect for a weekend breakfast or brunch, offering a delicious and versatile base for a variety of toppings.
