Egyptian Recipe: Konafa (Knafeh)

Konafa, also known as Knafeh, is a traditional Middle Eastern dessert that is especially popular in Egypt. It consists of shredded phyllo dough layered with a creamy filling, often cheese or custard, and soaked in a fragrant sugar syrup. The result is a crispy, sweet, and rich dessert that is perfect for special occasions and celebrations.

Ingredients

For the Konafa:

  • 500 grams (about 1 lb) of konafa dough (shredded phyllo dough)
  • 1 cup of melted butter
  • 1 cup of sugar
  • 1 cup of milk
  • 1 tablespoon of rose water or orange blossom water (optional)
  • 300 grams (about 10 oz) of ricotta cheese or a mix of mozzarella and cream cheese

For the Sugar Syrup:

  • 2 cups of sugar
  • 1 cup of water
  • 1 tablespoon of lemon juice
  • 1 teaspoon of rose water or orange blossom water (optional)

For Garnish:

  • Chopped pistachios
  • Ground cinnamon

Instructions

Preparing the Sugar Syrup

  1. Make the Syrup: In a medium saucepan, combine the sugar and water. Bring to a boil over medium-high heat, stirring until the sugar is dissolved. Add the lemon juice and reduce the heat to medium. Let it simmer for about 10 minutes until slightly thickened.
  2. Add Fragrance: Remove from heat and stir in the rose water or orange blossom water, if using. Set aside to cool.

Preparing the Konafa

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Dough: In a large bowl, gently loosen and separate the konafa dough. Pour the melted butter over the dough and mix well to coat all the strands.
  3. Layer the Dough: Spread half of the buttered konafa dough in a greased 9×13 inch baking dish or a round baking pan, pressing it down gently to form an even layer.
  4. Add the Filling: Spread the ricotta cheese or the mix of mozzarella and cream cheese evenly over the dough layer.
  5. Top with Dough: Spread the remaining konafa dough over the cheese layer, pressing it down gently to cover the cheese completely.

Baking the Konafa

  1. Bake the Konafa: Place the baking dish in the preheated oven and bake for about 30-40 minutes, or until the top is golden brown and crispy.

Finishing the Konafa

  1. Add the Syrup: As soon as the konafa comes out of the oven, pour the cooled sugar syrup evenly over the hot dessert. Make sure the syrup is absorbed evenly by pouring it gradually.
  2. Garnish: Sprinkle the top with chopped pistachios and a dusting of ground cinnamon.
  3. Cool and Serve: Allow the konafa to cool slightly before cutting it into squares or wedges. Serve warm or at room temperature.

Konafa is a beloved dessert in Egyptian cuisine and throughout the Middle East. It is often enjoyed during Ramadan, Eid, and other festive occasions. The combination of crispy, buttery dough and sweet, creamy filling makes it a crowd-pleaser.
