Preparing the Potatoes. Boil the potatoes in their skins until just tender—about 15-20 minutes depending on size. You want them cooked through but still holding shape. Overcooked potatoes turn mushy and make wet filling that can break through pastry. Once cool enough to handle, peel and cut into small cubes, about 1/4 inch. The small size ensures even spice distribution.
