Chinese Classic: Kung Pao Chicken

Kung Pao Chicken is a popular Chinese dish known for its bold flavors, featuring stir-fried chicken, peanuts, vegetables, and chili peppers in a savory and slightly spicy sauce. This dish is a favorite in Chinese cuisine and is perfect for a quick and delicious meal. Follow this recipe to create authentic Kung Pao Chicken at home.

Ingredients:

For the Marinade:

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine (Chinese cooking wine) or dry sherry
  • 1 teaspoon cornstarch

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/4 cup water

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 8-10 dried red chilies
  • 1/2 cup unsalted peanuts
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 4 green onions, cut into 1-inch pieces

Instructions:

Preparing the Chicken:

  1. Marinate the Chicken:
    • In a bowl, combine the chicken pieces with soy sauce, Shaoxing wine, and cornstarch. Mix well and let marinate for at least 15 minutes.

Making the Sauce:

  1. Prepare the Sauce:
    • In a small bowl, combine soy sauce, dark soy sauce, hoisin sauce, rice vinegar, sugar, cornstarch, and water. Mix until the sugar and cornstarch are dissolved. Set aside.

Stir-Frying the Dish:

  1. Heat the Oil:
    • Heat a wok or large skillet over medium-high heat. Add the vegetable oil and heat until shimmering.
  2. Cook the Chilies and Peanuts:
    • Add the dried red chilies and stir-fry for about 30 seconds until they darken slightly. Add the peanuts and stir-fry for another 1-2 minutes until they are golden and fragrant. Remove the chilies and peanuts from the wok and set aside.
  3. Cook the Chicken:
    • Add the marinated chicken to the wok and stir-fry until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the wok and set aside.
  4. Cook the Vegetables:
    • In the same wok, add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Add the diced bell peppers and stir-fry for 2-3 minutes until they are tender-crisp.
  5. Combine the Ingredients:
    • Return the chicken, chilies, and peanuts to the wok. Pour the sauce over the top and stir-fry for another 1-2 minutes until everything is well coated and the sauce has thickened.
  6. Add the Green Onions:
    • Add the green onions and stir-fry for another 30 seconds.

Serving:

  1. Serve Hot:
    • Transfer the Kung Pao Chicken to a serving plate and serve hot with steamed rice.
