Ingredients

Instructions
- Prepare the Ingredients:
- Peel and slice the potatoes into thin rounds. Slice the onion finely, and chop the leftover meat into bite-sized pieces.
- Layer the Stovies:
- In a large, deep pot, melt the butter or dripping over medium heat. Add a layer of sliced potatoes, followed by a layer of onions, and then a layer of the chopped meat. Season each layer with salt and pepper.
- Continue layering until all the ingredients are used up, finishing with a layer of potatoes on top.
- Cook the Stovies:
- Pour the stock over the layered ingredients. Cover the pot with a tight-fitting lid and reduce the heat to low.
- Allow the stovies to cook slowly for about 1.5 to 2 hours, stirring occasionally to prevent sticking. The potatoes should be tender, and the dish should have a stew-like consistency.
- Finish and Serve:
- Once the stovies are cooked, taste and adjust the seasoning if necessary. If you prefer a slightly crispy top, you can place the pot under a broiler for a few minutes to brown the top layer.
