Introduction

Stovies is a classic Scottish comfort food, typically made with leftover roast meat, potatoes, and onions. The dish is slow-cooked to create a hearty, stew-like consistency that’s both filling and flavorful. It’s a versatile dish, with variations depending on regional preferences and what leftovers are on hand.

Ingredients

  • 2 lbs (900g) potatoes, peeled and sliced
  • 1 large onion, finely sliced
  • 1 lb (450g) leftover roast beef, lamb, or sausage, chopped
  • 2 tbsp butter or dripping (from the roast)
  • 1 cup (240ml) beef or lamb stock
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Oatcakes, for serving

Instructions

  1. Prepare the Ingredients:
    • Peel and slice the potatoes into thin rounds. Slice the onion finely, and chop the leftover meat into bite-sized pieces.
  2. Layer the Stovies:
    • In a large, deep pot, melt the butter or dripping over medium heat. Add a layer of sliced potatoes, followed by a layer of onions, and then a layer of the chopped meat. Season each layer with salt and pepper.
    • Continue layering until all the ingredients are used up, finishing with a layer of potatoes on top.
  3. Cook the Stovies:
    • Pour the stock over the layered ingredients. Cover the pot with a tight-fitting lid and reduce the heat to low.
    • Allow the stovies to cook slowly for about 1.5 to 2 hours, stirring occasionally to prevent sticking. The potatoes should be tender, and the dish should have a stew-like consistency.
  4. Finish and Serve:
    • Once the stovies are cooked, taste and adjust the seasoning if necessary. If you prefer a slightly crispy top, you can place the pot under a broiler for a few minutes to brown the top layer.
    • Garnish with fresh parsley and serve hot with oatcakes on the side.

Stovies are the perfect way to use up leftover meat and create a comforting, warming dish that’s full of flavor. Enjoy this traditional Scottish meal on a cold evening, and savor the rich, homey taste of Scotland.
