It’s traditionally cooked by wrapping the pudding in a cloth (or “cloot”) and boiling it, which gives it a unique texture and flavor. Ingredients
- 1 cup (200g) self-raising flour
- 1/2 cup (100g) suet or butter, grated
- 1/2 cup (100g) sugar
- 1/2 cup (100g) breadcrumbs
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 cup (75g) raisins
- 1/2 cup (75g) currants
- 1/4 cup (50g) mixed peel
- 1 large egg, beaten
- 1/4 cup (60ml) milk
- 1/4 cup (60ml) treacle or molasses
- 1/4 cup (60ml) water
Instructions
- Prepare the Pudding Mixture:
- In a large mixing bowl, combine the flour, suet or grated butter, sugar, breadcrumbs, baking soda, and spices. Mix well.
- Stir in the raisins, currants, and mixed peel until evenly distributed.
- Add the Wet Ingredients:
- In a separate bowl, whisk together the egg, milk, treacle, and water. Pour the wet ingredients into the dry mixture and stir until everything is well combined, forming a thick batter.
- Prepare the Cloth:
- Take a clean cotton or muslin cloth (about 18 inches square) and scald it in boiling water. Wring it out, then spread it out and dust it generously with flour. This will help prevent the dumpling from sticking.
- Wrap the Dumpling:
- Spoon the pudding mixture onto the center of the floured cloth. Gather the edges of the cloth together and tie it securely with kitchen string, leaving enough space for the pudding to expand slightly as it cooks.
- Boil the Dumpling:
- Place a trivet or an upturned plate in the bottom of a large pot to keep the dumpling off the direct heat. Fill the pot with enough boiling water to cover the dumpling, then carefully lower the wrapped dumpling into the pot.
- Cover the pot with a lid and simmer gently for about 3-4 hours, ensuring the water level remains high enough to cover the dumpling.
- Unwrap and Serve:
- Once cooked, carefully lift the dumpling from the pot and place it on a plate. Untie the cloth and peel it away from the dumpling.
- Allow the dumpling to cool slightly before slicing. Serve dusted with powdered sugar and garnished with a festive sprig of holly or a similar decoration.
