Finnish Salmon Soup (Lohikeitto)

Lohikeitto, or Finnish Salmon Soup, is a traditional dish that highlights the simplicity and deliciousness of Finnish cuisine. This creamy soup is made with fresh salmon, potatoes, and leeks, creating a hearty and comforting meal perfect for any time of the year.

Ingredients:

  • 500g fresh salmon fillets
  • 4 large potatoes, peeled and cubed
  • 1 leek, cleaned and sliced
  • 1 carrot, peeled and sliced
  • 1 small onion, finely chopped
  • 1 liter fish stock
  • 200ml heavy cream
  • 2 tablespoons butter
  • Fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent.
    • Add the sliced leek and carrot, cooking for an additional 5 minutes.
  2. Cook the Potatoes:
    • Add the cubed potatoes to the pot and pour in the fish stock. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
  3. Add the Salmon:
    • Cut the salmon fillets into bite-sized pieces. Add them to the pot and cook until the salmon is opaque and cooked through, about 5-7 minutes.
  4. Finish the Soup:
    • Stir in the heavy cream and let the soup simmer for another 5 minutes. Season with salt and pepper to taste.
    • Remove the pot from the heat and stir in the fresh dill.
  5. Serve:
    • Serve the soup hot, garnished with additional dill if desired. This soup pairs beautifully with a slice of rye bread on the side.

This Finnish Salmon Soup is a wonderful example of Finnish comfort food, combining the rich flavors of salmon with the creamy broth and fresh dill.
