Ingredients

For the Kebabs:

  • 500g ground lamb or beef (or a mix of both)
  • 1 onion, finely grated
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground sumac (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 cup plain yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

For Serving:

  • Flatbreads or pita bread
  • Sliced onions
  • Fresh parsley
  • Sliced tomatoes
  • Lemon wedges
  • Turkish chili flakes (optional)

Instructions

  1. Prepare the Marinade:
    • In a bowl, combine the yogurt, olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and pepper. Mix well until all ingredients are fully integrated.
    • Set aside a small portion of the marinade to use as a sauce for serving.
  2. Prepare the Kebabs:
    • In a large bowl, combine the ground lamb or beef, grated onion, minced garlic, ground cumin, paprika, coriander, sumac (if using), salt, pepper, chopped parsley, and olive oil. Mix thoroughly using your hands until all ingredients are well distributed.
    • Take a handful of the meat mixture and mold it around a skewer, shaping it into a long, cylindrical kebab. Repeat with the remaining meat mixture.
  3. Marinate the Kebabs:
    • Place the skewered kebabs in a shallow dish and pour the prepared marinade over them, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, allowing the flavors to meld.
  4. Grill the Kebabs:
    • Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly spread.
    • Grill the kebabs for about 10-12 minutes, turning occasionally, until they are evenly browned and cooked through.
  5. Serve:
    • Warm the flatbreads or pita bread on the grill for a minute or two.
    • Serve the kebabs hot, garnished with sliced onions, fresh parsley, and sliced tomatoes. Add lemon wedges on the side for an extra burst of freshness.
    • Drizzle the reserved yogurt sauce over the kebabs and sprinkle with Turkish chili flakes if desired.
