Belgian Moules-Frites (Mussels with Fries)

Belgian cuisine is renowned for its rich flavors and hearty dishes, and one of the most iconic is Moules-Frites. This dish, which consists of mussels cooked in a flavorful broth and served with crispy Belgian fries, is a beloved staple in Belgium. Here’s how you can make this classic at home.

Ingredients:

  • For the Mussels:
    • 2 kg (4.4 lbs) fresh mussels, cleaned and debearded
    • 2 tablespoons butter
    • 2 shallots, finely chopped
    • 2 cloves garlic, minced
    • 1 cup dry white wine (or Belgian beer for an alternative flavor)
    • 1 cup fish stock or water
    • 1 bay leaf
    • Fresh thyme sprigs
    • Fresh parsley, chopped (for garnish)
    • Salt and pepper to taste
  • For the Fries:
    • 1 kg (2.2 lbs) potatoes, peeled and cut into thick fries
    • Vegetable oil for frying
    • Salt to taste

Instructions:

  1. Prepare the Fries:
    • First Frying: Heat oil in a deep fryer or large pot to 140°C (280°F). Fry the potato sticks for about 5-6 minutes until they are cooked but not browned. Remove and drain on paper towels.
    • Second Frying: Increase the oil temperature to 180°C (350°F). Fry the pre-cooked fries again for 2-3 minutes until golden and crispy. Drain on paper towels and season with salt.
  2. Cook the Mussels:
    • In a large pot, melt the butter over medium heat. Add the shallots and garlic, cooking until softened.
    • Pour in the white wine (or beer) and fish stock, and add the bay leaf and thyme. Bring to a boil.
    • Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, shaking the pot occasionally, until the mussels have opened.
    • Discard any mussels that do not open. Season with salt and pepper to taste.
  3. Serve:
    • Serve the mussels in large bowls, pouring the cooking liquid over them. Garnish with fresh parsley.
    • Accompany the mussels with a generous serving of the crispy fries on the side.
