Bulgarian Cuisine: How to Make Traditional Kebapche

Kebapche is a popular Bulgarian grilled dish made from seasoned minced meat. Shaped like sausages without casings, these meat delights are often enjoyed at barbecues and are a staple in Bulgarian cuisine.

Ingredients

For the Kebapche, you will need:

  • 500 grams of ground pork (or a mix of pork and beef)
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • 2 cloves of garlic, minced
  • 1/4 cup of sparkling water (optional, for a lighter texture)
  • Sunflower oil or olive oil for grilling

Instructions

Step 1: Preparing the Meat Mixture

  1. Combine Ingredients: In a large bowl, mix the ground meat with salt, black pepper, cumin, paprika, and minced garlic. If using, add the sparkling water to the mixture.
  2. Mix Thoroughly: Use your hands to mix the ingredients thoroughly until well combined. The mixture should be sticky and well blended.

Step 2: Shaping the Kebapche

  1. Shape the Meat: Take small portions of the meat mixture and shape them into long, sausage-like shapes, about 10-12 cm (4-5 inches) long and about 2-3 cm (1 inch) in diameter.
  2. Chill: Place the shaped Kebapche on a plate and refrigerate for at least 30 minutes. This helps them firm up and hold their shape during grilling.

Step 3: Grilling

  1. Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
  2. Grill the Kebapche: Place the Kebapche on the grill and cook for about 10-12 minutes, turning them occasionally to ensure they are evenly browned and cooked through. They should have a nice char on the outside while being juicy inside.

Serving

Kebapche is best served hot off the grill. Traditionally, it is enjoyed with a side of fresh salad, french fries, or bread. A popular way to serve Kebapche is with a dollop of lutenitsa (a Bulgarian red pepper and tomato relish) and a cold beer.

Tips and Variations

  • Mixing Meats: You can use a mixture of pork and beef for a different flavor profile.
  • Spicy Version: Add a pinch of chili flakes to the meat mixture if you prefer a spicier Kebapche.
  • Herbs: Experiment with adding fresh herbs like parsley or mint to the meat mixture for extra flavor.
