Kremšnita, also known as Kremsnita or Custard Slice, is a popular Croatian dessert that originates from the town of Samobor. It consists of layers of flaky puff pastry filled with a creamy vanilla custard and topped with powdered sugar. This delightful dessert is a favorite among locals and visitors alike.

Ingredients

For the Puff Pastry:

  • 2 sheets of puff pastry

For the Custard:

  • 1 liter (4 cups) whole milk
  • 8 egg yolks
  • 200 grams (1 cup) granulated sugar
  • 2 tablespoons vanilla sugar
  • 100 grams (1 cup) all-purpose flour
  • 50 grams (1/4 cup) cornstarch
  • 1 tablespoon vanilla extract
  • 500 ml (2 cups) heavy cream, whipped

For Topping:

  • Powdered sugar

Instructions

Preparing the Puff Pastry

  1. Bake the Puff Pastry: Preheat your oven to 200°C (400°F). Roll out the puff pastry sheets on a lightly floured surface. Transfer them to a baking sheet lined with parchment paper. Prick the pastry all over with a fork to prevent it from puffing up too much. Bake for 15-20 minutes, or until golden brown and crispy. Let them cool completely.

Preparing the Custard

  1. Heat the Milk: In a large saucepan, heat the milk over medium heat until it just begins to simmer. Remove from heat.
  2. Mix Egg Yolks and Sugar: In a large mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla sugar until pale and creamy.
  3. Add Flour and Cornstarch: Gradually add the flour and cornstarch to the egg mixture, whisking continuously to prevent lumps.
  4. Combine with Milk: Slowly pour the hot milk into the egg mixture, whisking constantly to combine.
  5. Cook the Custard: Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and comes to a boil. Remove from heat and stir in the vanilla extract. Let it cool to room temperature.
  6. Fold in Whipped Cream: Once the custard has cooled, gently fold in the whipped cream until fully combined.

Assembling the Kremšnita

  1. Prepare the Pastry Base: Place one sheet of baked puff pastry in the bottom of a rectangular baking dish.
  2. Add the Custard: Pour the custard mixture over the pastry base, spreading it evenly.
  3. Top with Pastry: Place the second sheet of baked puff pastry on top of the custard. Press down gently to adhere.
  4. Chill: Refrigerate the assembled Kremšnita for at least 4 hours, or until set.

Serving the Kremšnita

  1. Slice and Serve: Carefully slice the Kremšnita into squares or rectangles.
  2. Garnish: Dust the top with powdered sugar before serving.
