Ingredients

For the Soup:

  • 2 cups ground egusi (melon seeds)
  • 1/4 cup palm oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, chopped
  • 2 Scotch bonnet peppers, chopped (adjust for heat)
  • 4 large tomatoes, chopped
  • 1 lb meat (goat, beef, or chicken) or fish (tilapia or catfish)
  • 2 cups spinach or bitter leaf, chopped
  • 1/4 cup ground crayfish
  • 2 bouillon cubes
  • 6 cups water or meat stock
  • Salt and pepper to taste

For Serving:

  • Pounded yam, fufu, or rice

Instructions

Preparing the Ingredients

  1. Prepare the Egusi Paste:
    • In a bowl, mix the ground egusi with a small amount of water to form a thick paste. Set aside.
  2. Blend the Peppers and Tomatoes:
    • In a blender, combine the red bell pepper, Scotch bonnet peppers, and tomatoes. Blend until smooth and set aside.

Cooking the Soup

  1. Sauté the Aromatics:
    • In a large pot, heat the palm oil over medium heat.
    • Add the chopped onion and sauté until translucent.
    • Add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  2. Cook the Meat:
    • Add the meat or fish to the pot and cook until browned on all sides. If using fish, be gentle to avoid breaking it apart.
  3. Add the Blended Mixture:
    • Pour the blended pepper and tomato mixture into the pot. Cook for 10-15 minutes, stirring occasionally, until the mixture thickens and the oil begins to separate from the tomato mixture.
  4. Add the Egusi Paste:
    • Spoon the egusi paste into the pot in small lumps. Stir gently and cook for 10 minutes, allowing the egusi to absorb the flavors and thicken the soup.
  5. Season the Soup:
    • Add the ground crayfish, bouillon cubes, salt, and pepper. Stir to combine.
  6. Add the Greens:
    • Stir in the chopped spinach or bitter leaf. Cook for an additional 5-10 minutes until the greens are tender and well incorporated.

Serving

  1. Serve:
    • Ladle the Egusi Soup into bowls.
    • Serve hot with pounded yam, fufu, or rice.
