Egyptian Recipe: Molokhia (Jute Mallow Stew)

Molokhia, also known as Jute Mallow or Jew’s Mallow, is a traditional Egyptian dish that has been enjoyed for centuries. This green leafy vegetable is cooked into a flavorful and nutritious stew, often served with rice and either chicken or rabbit. The dish is renowned for its unique texture and rich, garlicky flavor, making it a beloved staple in Egyptian cuisine.

Ingredients

For the Molokhia Stew:

  • 500 grams (about 1 lb) of fresh or frozen molokhia leaves (jute mallow), finely chopped
  • 6 cups of chicken broth or water
  • 1 tablespoon of ground coriander
  • 6 cloves of garlic, minced
  • 2 tablespoons of vegetable oil or butter
  • Salt and pepper to taste
  • 1 whole chicken or rabbit, cut into pieces (optional, for serving)

For Serving:

  • Cooked white rice
  • Lemon wedges
  • Pita bread (optional)

Instructions

Preparing the Molokhia Stew

  1. Prepare the Molokhia Leaves: If using fresh molokhia leaves, remove the stems and finely chop the leaves. If using frozen molokhia, thaw it completely before use.
  2. Cook the Chicken or Rabbit (Optional): If you are serving the molokhia with chicken or rabbit, place the meat in a large pot and cover with water. Add salt, pepper, and any desired spices. Bring to a boil, then reduce the heat and let it simmer until the meat is fully cooked and tender. Remove the meat from the broth and set aside. Reserve the broth for the molokhia stew.
  3. Prepare the Garlic and Coriander Mixture: In a small skillet, heat the vegetable oil or butter over medium heat. Add the minced garlic and ground coriander. Sauté until the garlic turns golden and fragrant, but be careful not to burn it. Remove from heat and set aside.
  4. Cook the Molokhia: In a large pot, bring the chicken broth (or water) to a gentle boil. Gradually add the finely chopped molokhia leaves while stirring continuously to prevent clumping. Reduce the heat to a simmer.
  5. Add the Garlic Mixture: Stir the garlic and coriander mixture into the simmering molokhia. Continue to cook for about 5-10 minutes, or until the molokhia is tender and the flavors have melded together. Season with salt and pepper to taste.

Serving the Molokhia

  1. Prepare the Rice: Cook white rice according to your preference or package instructions.
  2. Serve the Molokhia: In a large serving bowl, ladle the hot molokhia stew. Serve it with pieces of cooked chicken or rabbit on the side or mixed into the stew.
  3. Add Accompaniments: Offer lemon wedges for squeezing over the molokhia and pita bread for dipping.
  4. Enjoy: Serve the molokhia stew alongside the cooked rice. The combination of the tender molokhia, savory garlic, and coriander, along with the tender meat and rice, creates a harmonious and satisfying meal.
