Ingredients

  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 large tomatoes, chopped
  • 1 can (400g) tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for extra heat)
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 2-3 bouillon cubes (optional, for added flavor)
  • Salt and pepper to taste
  • 1 cup mixed vegetables (carrots, peas, green beans)
  • 1-2 cups cooked chicken, shrimp, or beef (optional)
  • Fresh parsley or cilantro for garnish

Instructions

Preparing the Ingredients

  1. Rinse the Rice:
    • Rinse the rice under cold water until the water runs clear to remove excess starch. Drain and set aside.
  2. Blend the Peppers and Tomatoes:
    • In a blender, combine the red bell pepper, green bell pepper, and tomatoes. Blend until smooth and set aside.

Cooking the Jollof Rice

  1. Sauté the Aromatics:
    • In a large pot, heat the vegetable oil over medium heat.
    • Add the finely chopped onion and sauté until translucent.
    • Add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  2. Cook the Tomato Paste:
    • Stir in the tomato paste and cook for 5-7 minutes, stirring frequently, until the tomato paste darkens and loses its raw taste.
  3. Add the Blended Mixture:
    • Pour in the blended pepper and tomato mixture. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens and the oil begins to separate from the tomato mixture.
  4. Season the Sauce:
    • Add the thyme, curry powder, paprika, cayenne pepper (if using), and bay leaves.
    • Crush the bouillon cubes and add them to the pot, stirring to combine.
    • Season with salt and pepper to taste.
  5. Cook the Rice:
    • Add the rinsed rice to the pot, stirring well to coat the rice with the sauce.
    • Pour in the chicken or vegetable broth, ensuring the rice is fully submerged in liquid.
    • Bring to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Avoid lifting the lid frequently to ensure even cooking.
  6. Add the Vegetables and Protein:
    • Once the rice is cooked, stir in the mixed vegetables and cooked chicken, shrimp, or beef (if using).
    • Cover and cook for an additional 5 minutes until the vegetables are tender and the protein is heated through.

Serving

  1. Fluff and Garnish:
    • Remove the bay leaves and fluff the rice with a fork.
    • Garnish with fresh parsley or cilantro.
  2. Serve:
    • Serve the Jollof Rice hot, accompanied by fried plantains, coleslaw, or a side of your choice.
