Icelandic Classic: Kjöt Soup (Icelandic Lamb Soup)

Kjötsúpa, or Icelandic lamb soup, is a traditional and hearty dish that is a staple in Icelandic cuisine. Made with tender lamb, root vegetables, and a flavorful broth, this soup is perfect for warming up on a cold day. Follow this recipe to create an authentic Kjöt Soup at home.

Ingredients:

  • 1.5 lbs (700g) lamb shoulder or neck, cut into chunks
  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 2-3 large potatoes, peeled and diced
  • 1 small rutabaga (swede), peeled and diced
  • 1 small head of cabbage, chopped
  • 6 cups water
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions:

Preparing the Soup:

  1. Boil the Lamb:
    • In a large pot, add the lamb chunks and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Skim off any foam that rises to the surface.
  2. Add Vegetables:
    • Add the chopped onion, sliced carrots, diced potatoes, and diced rutabaga to the pot. Stir in the salt, pepper, dried thyme, and bay leaf. Add more water if needed to cover the vegetables and meat.
  3. Simmer:
    • Cover the pot and let the soup simmer for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
  4. Add Cabbage:
    • Add the chopped cabbage to the pot and cook for another 20-30 minutes, until the cabbage is tender.

Serving:

  1. Garnish:
    • Remove the bay leaf from the soup. Serve the Kjötsúpa hot, garnished with chopped fresh parsley.
  2. Accompaniments:
    • Enjoy the soup with slices of rye bread or crusty bread on the side.
