Icelandic Delight: Skyr Cake

Skyr Cake is a delicious and light dessert that uses Icelandic skyr, a dairy product similar to yogurt but thicker and creamier. This no-bake cheesecake is easy to make and perfect for a refreshing treat. Follow this recipe to create an authentic Icelandic Skyr Cake.

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 2 cups plain skyr (or Greek yogurt as a substitute)
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 packet gelatin (about 1 tablespoon)
  • 1/4 cup cold water

For the Topping:

  • Fresh berries (such as blueberries, raspberries, or strawberries)
  • Mint leaves (optional)

Instructions:

Preparing the Crust:

  1. Mix the Crust Ingredients:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
  2. Form the Crust:
    • Press the mixture into the bottom of a 9-inch springform pan, using the back of a spoon to create an even layer. Refrigerate while preparing the filling.

Preparing the Filling:

  1. Dissolve the Gelatin:
    • In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom. Then, gently heat the mixture until the gelatin is fully dissolved.
  2. Whip the Cream:
    • In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
  3. Combine the Skyr:
    • In another bowl, mix the skyr, sugar, lemon juice, and vanilla extract until smooth.
  4. Add the Gelatin:
    • Gradually mix the dissolved gelatin into the skyr mixture, stirring constantly to avoid lumps.
  5. Fold in the Whipped Cream:
    • Gently fold the whipped cream into the skyr mixture until fully incorporated.

Assembling the Cake:

  1. Pour the Filling:
    • Pour the skyr mixture over the prepared crust, spreading it evenly with a spatula.
  2. Chill the Cake:
    • Refrigerate the cake for at least 4 hours, or until set.

Serving:

  1. Garnish:
    • Before serving, top the cake with fresh berries and mint leaves if desired.
  2. Slice and Serve:
    • Remove the sides of the springform pan, slice the Skyr Cake, and serve chilled.
