Ingredients

  • 2 cups black-eyed peas or brown beans
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 2 Scotch bonnet peppers (adjust for heat)
  • 2 cloves garlic, minced
  • 1/4 cup vegetable oil or palm oil
  • 2 bouillon cubes
  • 1 teaspoon ground crayfish (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • Salt to taste
  • 3-4 cups water or broth
  • 3 hard-boiled eggs, sliced (optional)
  • 1 cup flaked fish or cooked ground meat (optional)
  • Banana leaves, aluminum foil, or ramekins for steaming

Instructions

Preparing the Beans

  1. Soak the Beans:
    • Soak the beans in water for about 1 hour to soften the skins.
    • Rub the beans between your hands to remove the skins. Rinse and repeat until most of the skins are removed.
  2. Blend the Beans:
    • In a blender, combine the peeled beans, chopped onion, red bell pepper, Scotch bonnet peppers, and garlic.
    • Add some water or broth to facilitate blending and blend until smooth.

Preparing the Batter

  1. Mix the Batter:
    • Pour the blended mixture into a large bowl.
    • Add the vegetable oil or palm oil, bouillon cubes, ground crayfish (if using), smoked paprika, thyme, and salt.
    • Gradually add the remaining water or broth, stirring continuously until you achieve a smooth, slightly thick batter.

Assembling and Steaming

  1. Prepare the Steaming Containers:
    • If using banana leaves, cut them into manageable pieces and soften by dipping them briefly in hot water.
    • If using aluminum foil, cut it into large squares.
    • Alternatively, grease ramekins or small baking cups.
  2. Fill the Containers:
    • Pour the batter into the prepared containers, filling them about two-thirds full.
    • If using, place slices of hard-boiled eggs and flaked fish or ground meat into the batter.
  3. Seal the Containers:
    • Fold the banana leaves or aluminum foil to seal the batter inside, ensuring no leaks.
    • If using ramekins, cover them with aluminum foil.

Steaming the Moi Moi

  1. Steam the Moi Moi:
    • Arrange the filled and sealed containers in a large pot with a steamer basket or rack.
    • Add enough water to the pot to create steam, but not so much that it touches the containers.
    • Cover the pot and steam the Moi Moi over medium heat for about 45-60 minutes, or until set and cooked through. Check periodically and add more water if necessary.

    • Allow the Moi Moi to cool slightly before unwrapping or removing from the ramekins.
