Japanese Classic: Sukiyaki

Sukiyaki is a popular Japanese hot pot dish featuring thinly sliced beef, vegetables, tofu, and noodles simmered in a sweet and savory broth made from soy sauce, sugar, and mirin. This comforting and communal meal is perfect for sharing with family and friends. Follow this recipe to create a delicious Sukiyaki at home.

Ingredients:

  • 1 lb (450g) thinly sliced beef (ribeye or sirloin)
  • 1 block firm tofu, cut into cubes
  • 1/2 head napa cabbage, chopped
  • 1 bunch green onions, cut into 2-inch pieces
  • 1 large carrot, thinly sliced
  • 1 pack enoki mushrooms, trimmed
  • 1 pack shiitake mushrooms, sliced
  • 1 pack shirataki noodles, rinsed and drained
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 2 tablespoons sugar
  • 2 cups dashi (Japanese soup stock)
  • 2 large eggs (optional, for dipping)

Instructions:

Preparing the Ingredients:

  1. Slice the Beef:
    • If not pre-sliced, slice the beef thinly against the grain.
  2. Prepare the Vegetables:
    • Chop the napa cabbage, cut the green onions, slice the carrot, and prepare the mushrooms. Cut the tofu into cubes.
  3. Prepare the Shirataki Noodles:
    • Rinse and drain the shirataki noodles.

Making the Sukiyaki Broth:

  1. Combine Ingredients:
    • In a bowl, mix the soy sauce, mirin, sake, sugar, and dashi to create the broth.

Cooking the Sukiyaki:

  1. Heat the Pot:
    • Heat a large, shallow pot or skillet over medium-high heat. Add a little oil if needed.
  2. Cook the Beef:
    • Add the sliced beef to the pot and cook until just browned. Push the beef to one side of the pot.
  3. Add the Broth:
    • Pour the broth mixture into the pot.
  4. Add the Vegetables and Tofu:
    • Arrange the tofu, napa cabbage, green onions, carrot, mushrooms, and shirataki noodles in the pot around the beef.
  5. Simmer:
    • Bring the broth to a simmer and cook until the vegetables are tender and the flavors are well combined, about 10-15 minutes.

Serving:

  1. Optional Egg Dipping Sauce:
    • If desired, crack the eggs into small bowls and lightly beat. Diners can dip the hot ingredients into the raw egg before eating (make sure the eggs are fresh and safe to eat raw).
  2. Serve Hot:
    • Serve the Sukiyaki directly from the pot, allowing diners to pick their favorite ingredients and enjoy with rice on the side.
