Mexican Classic: Chilaquiles

Chilaquiles are a traditional Mexican dish made with lightly fried corn tortillas simmered in a flavorful sauce, often topped with eggs, cheese, and fresh ingredients. This dish is a popular breakfast or brunch option and can be customized to suit your taste. Follow this recipe to create delicious Chilaquiles at home.

Ingredients:

For the Chilaquiles:

  • 8 corn tortillas, cut into triangles
  • Vegetable oil for frying
  • 2 cups salsa verde or red salsa
  • 1/2 cup chicken broth
  • 1 cup cooked shredded chicken (optional)
  • 2 large eggs
  • 1/2 cup crumbled queso fresco or shredded cheddar cheese
  • 1/4 cup sour cream or Mexican crema
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced onion
  • Lime wedges (for serving)

Instructions:

Preparing the Tortillas:

  1. Fry the Tortillas:
    • In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Fry the tortilla triangles until golden and crispy, about 2-3 minutes per side. Remove from the oil and drain on paper towels. Alternatively, you can bake the tortilla triangles in a preheated oven at 400°F (200°C) for about 10-12 minutes, turning halfway through, until crispy.

Preparing the Sauce:

  1. Simmer the Sauce:
    • In a large skillet, combine the salsa and chicken broth. Bring to a simmer over medium heat.
  2. Add the Tortillas:
    • Add the fried tortilla triangles to the skillet, gently tossing to coat them in the sauce. Simmer for about 5 minutes until the tortillas have softened slightly but are not mushy.

Preparing the Eggs:

  1. Cook the Eggs:
    • In a separate skillet, cook the eggs to your liking (sunny-side-up, scrambled, or poached).

Assembling the Chilaquiles:

  1. Combine Ingredients:
    • If using, add the cooked shredded chicken to the skillet with the tortillas and sauce. Gently toss to combine.
  2. Top with Eggs:
    • Transfer the chilaquiles to serving plates and top each portion with a cooked egg.
  3. Add Fresh Toppings:
    • Sprinkle crumbled queso fresco or shredded cheese over the top. Drizzle with sour cream or Mexican crema.
  4. Garnish:
    • Garnish with sliced avocado, chopped fresh cilantro, and diced onion. Serve with lime wedges on the side.
