Tamales are a traditional Mexican dish made from masa (corn dough) filled with various ingredients, wrapped in corn husks, and steamed until tender. These delicious parcels are perfect for special occasions and family gatherings. Follow this recipe to create authentic Tamales at home.

Ingredients:

For the Masa:

  • 4 cups masa harina (corn flour)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup vegetable shortening or lard
  • 3-4 cups chicken broth, warmed

For the Filling:

  • 2 cups cooked shredded chicken or pork
  • 1 cup salsa verde or red chile sauce
  • 1 cup shredded cheese (optional)
  • Soaked corn husks (for wrapping)

Instructions:

Preparing the Masa:

  1. Mix the Dry Ingredients:
    • In a large bowl, combine the masa harina, baking powder, and salt.
  2. Beat the Shortening:
    • In a separate bowl, beat the vegetable shortening or lard until light and fluffy, about 3-5 minutes.
  3. Combine Masa and Shortening:
    • Gradually add the masa mixture to the shortening, alternating with the warm chicken broth. Mix until a smooth, spreadable dough forms. The dough should be moist but not sticky. If needed, add more broth to achieve the desired consistency.

Preparing the Filling:

  1. Combine the Filling:
    • In a bowl, mix the shredded chicken or pork with the salsa verde or red chile sauce.

Assembling the Tamales:

  1. Prepare the Corn Husks:
    • Soak the corn husks in warm water for about 30 minutes until pliable. Drain and pat dry.
  2. Spread the Masa:
    • Lay a corn husk flat with the smooth side up. Spread a 1/4-inch thick layer of masa dough over the bottom half of the husk, leaving about 1 inch of space on the sides.
  3. Add the Filling:
    • Place a spoonful of the filling in the center of the masa. Add a sprinkle of shredded cheese if desired.
  4. Fold and Roll:
    • Fold the sides of the husk over the filling, then fold up the bottom end. Secure with a strip of corn husk or kitchen twine if needed. Repeat with the remaining ingredients.

Cooking the Tamales:

  1. Steam the Tamales:
    • Arrange the tamales upright in a steamer basket, with the open ends facing up. Add water to the steamer and cover with a damp cloth or extra corn husks. Steam for about 1.5 to 2 hours, or until the masa is firm and pulls away easily from the husk.

Serving:

  1. Serve Hot:
    • Let the tamales cool slightly before serving. Serve with additional salsa and a side of beans or rice.
