Moroccan Chicken with Preserved Lemons and Olives is a classic dish that combines tender chicken with the unique flavors of preserved lemons and briny olives, all infused with a blend of aromatic spices. This dish is typically cooked in a tagine, which helps to develop deep, rich flavors. Here’s a traditional recipe to help you make Moroccan Chicken with Preserved Lemons and Olives at home.

Ingredients:

  • For the Chicken:
    • 1 whole chicken (about 1.5 kg / 3.3 lbs), cut into pieces
    • 2 tablespoons olive oil
    • 2 large onions, finely chopped
    • 3 cloves garlic, minced
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon ground turmeric
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon paprika
    • 1/4 teaspoon ground cayenne pepper (optional)
    • Salt to taste
    • 1 cinnamon stick
    • 1 cup chicken broth
    • 2 preserved lemons, quartered
    • 1 cup green olives, pitted
    • 1/4 cup fresh cilantro, chopped
    • 1/4 cup fresh parsley, chopped

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine the ground ginger, ground cumin, ground coriander, ground turmeric, ground black pepper, paprika, ground cayenne pepper (if using), and salt. Add the chicken pieces and toss to coat. Let it marinate for at least 1 hour, or overnight for best results.
  2. Cook the Chicken:
    • In a tagine pot or a heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until the onions are soft and translucent.
    • Add the marinated chicken pieces to the pot and brown them on all sides.
    • Add the cinnamon stick, chicken broth, and preserved lemons. Bring to a simmer, then reduce the heat to low. Cover the pot and let it cook slowly for about 1.5 hours, or until the chicken is tender.
  3. Add the Olives:
    • About 15 minutes before the chicken is done, add the green olives to the pot. Stir gently to combine and let the flavors meld together.
  4. Serve:
    • Garnish the chicken with chopped fresh cilantro and parsley.
    • Serve the Moroccan Chicken with Preserved Lemons and Olives hot, accompanied by couscous or crusty bread.

Tips for Perfect Chicken Tagine:

  • Preserved Lemons: Use high-quality preserved lemons for the best flavor. If you don’t have preserved lemons, you can use fresh lemon zest and juice as a substitute.
  • Slow Cooking: Allow the tagine to cook slowly on low heat to develop deep flavors.
  • Tagine Pot: If you don’t have a traditional tagine pot, a heavy-bottomed Dutch oven can be used.

Cultural Significance:

Moroccan Chicken with Preserved Lemons and Olives is a beloved dish that reflects the rich culinary traditions of Morocco. It is often enjoyed during family gatherings and special occasions, showcasing the country’s love for aromatic spices and bold flavors.

Making Moroccan Chicken with Preserved Lemons and Olives at home allows you to enjoy a flavorful and traditional dish that’s perfect for any occasion. This hearty meal, with its blend of tender chicken, tangy preserved lemons, and briny olives, is sure to become a favorite in your household.
