Paprikaš – Serbian Chicken Paprikash

Paprikaš, or Chicken Paprikash, is a traditional Serbian stew made with chicken, onions, and plenty of paprika. This hearty and flavorful dish is perfect for a comforting meal, especially during the colder months. Here’s how to make it at home.

Ingredients:

  • 1 kg chicken thighs and drumsticks
  • 2 large onions, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons vegetable oil
  • 2 tablespoons sweet paprika
  • 1 teaspoon hot paprika (optional)
  • 2 large tomatoes, diced
  • 2 bell peppers, sliced
  • 2 potatoes, diced
  • 1 cup chicken broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Chicken:
    • Season the chicken thighs and drumsticks with salt and pepper.
  2. Cook the Chicken:
    • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken pieces and brown them on all sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
  3. Prepare the Base:
    • In the same pot, add the chopped onions and cook until they are soft and translucent, about 10 minutes.
    • Add the minced garlic and cook for another minute.
  4. Add the Vegetables and Spices:
    • Stir in the sweet paprika and hot paprika (if using) and cook for another minute to release the flavors.
    • Add the diced tomatoes, sliced bell peppers, and diced potatoes to the pot. Stir to combine.
  5. Simmer the Stew:
    • Return the browned chicken to the pot. Pour in the chicken broth and bring to a simmer.
    • Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Finish the Stew:
    • Stir in the sour cream and cook for another 5 minutes, until the sauce is creamy and well combined.
    • Adjust the seasoning with salt and pepper to taste.
  7. Serve:
    • Garnish the Paprikaš with fresh parsley before serving.
    • Serve hot, with a side of crusty bread or over a bed of rice or noodles.
