Paprikaš, or Chicken Paprikash, is a traditional Serbian stew made with chicken, onions, and plenty of paprika. This hearty and flavorful dish is perfect for a comforting meal, especially during the colder months. Here’s how to make it at home.
Ingredients:
- 1 kg chicken thighs and drumsticks
- 2 large onions, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons vegetable oil
- 2 tablespoons sweet paprika
- 1 teaspoon hot paprika (optional)
- 2 large tomatoes, diced
- 2 bell peppers, sliced
- 2 potatoes, diced
- 1 cup chicken broth
- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Prepare the Chicken:
- Season the chicken thighs and drumsticks with salt and pepper.
- Cook the Chicken:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken pieces and brown them on all sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
- Prepare the Base:
- In the same pot, add the chopped onions and cook until they are soft and translucent, about 10 minutes.
- Add the minced garlic and cook for another minute.
- Add the Vegetables and Spices:
- Stir in the sweet paprika and hot paprika (if using) and cook for another minute to release the flavors.
- Add the diced tomatoes, sliced bell peppers, and diced potatoes to the pot. Stir to combine.
- Simmer the Stew:
- Return the browned chicken to the pot. Pour in the chicken broth and bring to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Finish the Stew:
- Stir in the sour cream and cook for another 5 minutes, until the sauce is creamy and well combined.
- Adjust the seasoning with salt and pepper to taste.
- Serve:
- Garnish the Paprikaš with fresh parsley before serving.
- Serve hot, with a side of crusty bread or over a bed of rice or noodles.
