Ingredients
- 2 lbs (900g) potatoes, peeled and chopped
- 1/2 head of cabbage, finely shredded

- 2 tbsp butter
- 1 cup (100g) grated cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Potatoes:
- Boil the chopped potatoes in salted water for about 15-20 minutes, or until tender. Drain and return to the pot.
- Mash the potatoes with 1 tablespoon of butter until smooth and creamy. Season with salt and pepper to taste.
- Cook the Cabbage and Onions:
- While the potatoes are cooking, melt the remaining butter in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the shredded cabbage and continue to cook until the cabbage is tender, about 10 minutes.
- Combine the Ingredients:
- Preheat your oven to 375°F (190°C).
- Stir the cooked cabbage and onions into the mashed potatoes until well combined. Transfer the mixture to a greased baking dish, spreading it out evenly.
- Add the Cheese Topping:
- Sprinkle the grated cheddar cheese over the top of the potato and cabbage mixture.
- Place the dish in the oven and bake for about 20-25 minutes, or until the cheese is melted and golden brown.
- Serve:
