Sicilian Classic: Arancini (Sicilian Rice Balls)

Arancini are a popular Sicilian street food made from risotto rice, stuffed with various fillings, coated in breadcrumbs, and deep-fried until golden and crispy. These delicious rice balls are perfect for appetizers or a satisfying snack. Follow this recipe to create authentic Sicilian Arancini at home.

Ingredients:

For the Risotto:

  • 2 cups Arborio rice
  • 1 small onion, finely chopped
  • 4 cups chicken or vegetable broth
  • 1 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Filling:

  • 1 cup mozzarella cheese, diced
  • 1 cup cooked ground beef or peas (optional)
  • 1/2 cup tomato sauce (optional)

For the Coating:

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups breadcrumbs
  • Vegetable oil for frying

Instructions:

Preparing the Risotto:

  1. Cook the Risotto:
    • In a large pan, heat the olive oil and butter over medium heat. Add the finely chopped onion and cook until translucent. Add the Arborio rice and stir to coat the grains with the oil and butter.
  2. Add the Wine:
    • Pour in the white wine and cook until it has evaporated, stirring constantly.
  3. Add the Broth:
    • Gradually add the chicken or vegetable broth, one ladle at a time, stirring frequently. Allow each addition of broth to be absorbed before adding the next. Continue until the rice is cooked and creamy.
  4. Add Cheese and Season:
    • Stir in the grated Parmesan cheese and season with salt and pepper to taste. Let the risotto cool completely.

Assembling the Arancini:

  1. Form the Rice Balls:
    • Take a small handful of cooled risotto and flatten it in your palm. Place a piece of mozzarella cheese (and some ground beef or peas, if using) in the center. Shape the rice around the filling to form a ball. Repeat with the remaining risotto and filling.
  2. Coat the Rice Balls:
    • Dredge each rice ball in flour, dip in beaten eggs, and then roll in breadcrumbs to coat evenly.

Frying the Arancini:

  1. Heat the Oil:
    • In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
  2. Fry the Arancini:
    • Fry the rice balls in batches until they are golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.

Serving:

  1. Serve Hot:
    • Serve the Arancini hot, with a side of marinara or tomato sauce for dipping, if desired.
