Spanish Delight: Albondigas (Spanish Meatballs)

Albondigas, or Spanish meatballs, are a beloved dish that can be enjoyed as a tapa, appetizer, or main course. These flavorful meatballs are made with a mixture of ground meat, breadcrumbs, and spices, then simmered in a rich tomato sauce. Follow this recipe to create authentic Albondigas that will transport you to Spain.

Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil (for frying)

For the Tomato Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken or beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste

Instructions:

Making the Meatballs:

  1. Prepare the Meatball Mixture:
    • In a large mixing bowl, combine the ground meat, breadcrumbs, milk, beaten egg, minced garlic, finely chopped onion, fresh parsley, smoked paprika, ground cumin, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Shape the Meatballs:
    • Use your hands to shape the mixture into small meatballs, about 1 inch in diameter. Place them on a plate or baking sheet.
  3. Fry the Meatballs:
    • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the meatballs in batches, cooking until they are browned on all sides. Remove the meatballs from the skillet and set them aside.

Making the Tomato Sauce:

  1. Sauté the Onion and Garlic:
    • In the same skillet, add 2 tablespoons of olive oil. Sauté the finely chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  2. Add the Tomatoes and Spices:
    • Stir in the crushed tomatoes, chicken or beef broth, smoked paprika, dried oregano, bay leaf, salt, and pepper. Bring the mixture to a simmer.
  3. Simmer the Meatballs:
    • Return the browned meatballs to the skillet. Simmer the meatballs in the tomato sauce for 20-25 minutes, or until they are cooked through and the sauce has thickened. Stir occasionally.

Serving:

  1. Serve Hot:
    • Remove the bay leaf from the sauce. Serve the Albondigas hot, garnished with additional fresh parsley if desired. They can be enjoyed on their own, with crusty bread, or over rice or pasta.
