Swedish Almond Cake, known as Mandelkaka, is a classic dessert that is both simple and elegant. It’s a moist, flavorful cake with a distinct almond taste, making it perfect for any occasion, from holiday celebrations to everyday treats. Here’s how you can make this delightful cake at home.

Ingredients:

  • For the Cake:
    • 1/2 cup butter (1 stick)
    • 1 cup sugar
    • 1 egg
    • 2/3 cup milk
    • 1 1/2 teaspoons almond extract
    • 1/2 teaspoon baking powder
    • 1 1/4 cups all-purpose flour
  • Suggested Toppings:
    • Powdered sugar
    • Slivered almonds
    • Fresh berries
    • Whipped cream (optional)

Instructions:

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C). Grease a Rehrucken/almond cake loaf pan or a bundt pan if you don’t have the specialized pan.
    • Melt the butter in the microwave or on the stovetop.
    • In a large mixing bowl, beat together the sugar, milk, egg, and almond extract until well combined.
    • Stir in the baking powder and flour until the mixture is smooth.
    • Add the melted butter to the batter and mix until fully incorporated.
  2. Bake the Cake:
    • Pour the batter into the prepared pan.
    • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the pan before attempting to remove it. This helps prevent cracking.
  3. Decorate and Serve:
    • Once the cake is cool, invert it onto a serving platter.
    • Dust the top with powdered sugar and sprinkle with slivered almonds. You can also add fresh berries or a drizzle of almond glaze for extra flavor.
    • For the almond glaze, mix 1 cup powdered sugar with 1 tablespoon milk and 1/2 teaspoon almond extract, then drizzle over the cake.

This Swedish Almond Cake is perfect with a cup of coffee or tea and can be stored at room temperature for up to three days or frozen for longer storage.
