  2. Cook the Bacon:
    • In a large frying pan, cook the bacon or pork belly over medium heat until crispy. Remove from the pan and set aside. Reserve the fat in the pan for frying the pancakes.
  3. Fry the Pancakes:
    • In the same frying pan with the reserved bacon fat (add more butter or oil if necessary), spoon about 1/4 cup of the potato batter for each pancake.
    • Flatten the batter slightly with the back of the spoon to form a pancake.
    • Cook over medium heat for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining batter.
  4. Serve:

    • Add a generous dollop of lingonberry sauce on the side.
    • Garnish with fresh parsley if desired.
