The Simplest Yet Most Flavorful: Classic Aglio e Olio Recipe

Aglio e Olio, which translates to “garlic and oil” in Italian, is a simple and flavorful pasta dish made with just a few key ingredients. Here’s what you’ll need:

Ingredients:

  • 1 pound dried spaghetti (or your preferred pasta)
  • 1/2 cup good quality extra virgin olive oil
  • 6-8 cloves garlic, thinly sliced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley (optional)
  • 1 cup grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions, one minute shy of al dente. Reserve about 1/2 cup of the pasta water before draining.
  2. Sauté the Garlic: While the pasta cooks, heat the olive oil in a large skillet or pan over medium heat. Add the sliced garlic and cook gently, stirring frequently, until fragrant and lightly golden brown. Be careful not to burn the garlic, as it will turn bitter.
  3. Combine Everything: Add the red pepper flakes (if using) to the pan with the garlic and olive oil. Toss for a few seconds, then drain the pasta and immediately add it to the pan with the garlic oil.
  4. Emulsify the Sauce: Using tongs, toss the pasta with the garlic oil until well coated. Gradually add reserved pasta water, a little at a time, tossing constantly, until a creamy sauce forms. This starchy pasta water helps create a silky and flavorful sauce.
  5. Season and Serve: Season the pasta with salt and freshly ground black pepper to taste. Remove from heat and stir in chopped fresh parsley (if using). Serve immediately with grated Parmesan cheese on the side, for those who want to add more.

Tips:

  • Use high-quality extra virgin olive oil for the best flavor.
  • Don’t overcook the garlic. You want it golden brown, not burnt.
  • Reserve some pasta water before draining. The starch in the water helps create a silky sauce that clings to the pasta.
  • Add other ingredients for variations! Chopped vegetables like cherry tomatoes or sauteed shrimp are popular additions.
