Traditional Indian Recipe: Aloo Gobi

Aloo Gobi is a classic vegetarian dish from Northern India, featuring potatoes (aloo) and cauliflower (gobi) cooked with a blend of aromatic spices. This dish is simple yet flavorful, making it a favorite in Indian households. Here’s a detailed guide to making authentic Aloo Gobi at home.

Ingredients

  • 2 large potatoes, peeled and cubed
  • 1 medium cauliflower, cut into florets
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green chilies, chopped (optional)
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions

Step 1: Prepare the Vegetables

  1. Boil the potato cubes in salted water until partially cooked. Drain and set aside.
  2. Blanch the cauliflower florets in boiling water for 2-3 minutes. Drain and set aside.

Step 2: Cook the Aloo Gobi

  1. Heat the oil in a large pan over medium heat.
  2. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  3. Add the chopped onions and sauté until golden brown.
  4. Stir in the minced garlic, ginger, and green chilies (if using), and cook for another 2-3 minutes until fragrant.
  5. Add the turmeric powder, ground cumin, ground coriander, and red chili powder. Cook the spices for 1-2 minutes, stirring continuously.
  6. Add the chopped tomatoes and cook until they soften and the oil begins to separate from the masala.
  7. Add the partially cooked potatoes and cauliflower florets. Mix well to coat the vegetables with the spice mixture.
  8. Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally, until the vegetables are tender and cooked through.
  9. Sprinkle garam masala over the cooked vegetables and mix well.
  10. Season with salt to taste.

Step 3: Serve

  1. Garnish with freshly chopped coriander leaves.
  2. Serve hot with roti, naan, or steamed basmati rice.
  3. Accompany with lemon wedges for an extra tangy flavor.

Tips for Perfect Aloo Gobi

  • Vegetable Prep: Ensure the potatoes and cauliflower are cut into even-sized pieces for uniform cooking.
  • Spice Level: Adjust the amount of green chilies and red chili powder to suit your heat preference.
  • Consistency: If you prefer a drier version of Aloo Gobi, cook uncovered for the last few minutes to evaporate excess moisture.
