Cranachan is a traditional Scottish dessert that is often served at celebrations and special occasions. This delightful treat combines raspberries, toasted oats, whipped cream, honey, and whisky to create a dessert that is both indulgent and refreshing. Here’s how you can make this classic Scottish dessert at home.

Ingredients:

  • 100g (3.5 oz) rolled oats
  • 300ml (1.25 cups) double cream (heavy cream)
  • 250g (9 oz) fresh raspberries
  • 3 tablespoons Scottish heather honey
  • 3 tablespoons Scotch whisky
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Prepare the Oats:
    • In a dry frying pan, toast the rolled oats over medium heat until they are golden brown and fragrant. Stir frequently to avoid burning. This should take about 5-10 minutes. Let the oats cool completely.
  2. Prepare the Cream:
    • In a large mixing bowl, whip the double cream until it forms soft peaks. Be careful not to overwhip the cream.
  3. Combine the Ingredients:
    • Gently fold the toasted oats, honey, and whisky into the whipped cream. Mix until just combined.
  4. Layer the Dessert:
    • In serving glasses or bowls, layer the whipped cream mixture with fresh raspberries. Start with a layer of raspberries, then add a layer of the cream mixture, and repeat until the glasses are filled, finishing with a layer of cream on top.
  5. Serve:
    • Garnish with a few whole raspberries and a sprig of fresh mint if desired. Serve immediately.
