  • 1/2 cup fine bulgur wheat

  • 4-5 green onions, finely chopped

Instructions:

  1. Prepare the Bulgur Wheat:
    • Rinse the bulgur wheat under cold water and drain. Place it in a small bowl and cover with warm water. Let it soak for about 20-30 minutes, then drain well and squeeze out any excess water.
  2. Chop the Herbs and Vegetables:
    • Finely chop the parsley and mint leaves, discarding the thick stems. Finely dice the tomatoes and onions. Chop the green onions.
  3. Combine the Ingredients:
    • In a large mixing bowl, combine the soaked bulgur wheat, chopped parsley, mint, tomatoes, onions, and green onions. Mix well.
  4. Dress the Salad:
    • Add the fresh lemon juice and extra virgin olive oil to the bowl. Season with salt and pepper to taste. Toss everything together until well combined.
  5. Serve:
    • Serve the tabbouleh on a large platter or in a bowl, lined with romaine lettuce leaves. The lettuce leaves can be used as scoops for the salad.
