Ingredients:

  • For the Dough:
    • 3 cups all-purpose flour
    • 1 cup butter, chilled and cubed
    • 1 teaspoon salt
    • 2 large eggs
    • 1/4 cup cold water
  • For the Filling:
    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 500 g (1 lb) chicken breast, cooked and shredded
    • 1 cup hearts of palm, sliced
    • 1/2 cup green olives, sliced
    • 1/2 cup corn kernels (optional)
    • 1/2 cup peas (optional)
    • 2 tablespoons tomato paste
    • 1 cup chicken broth
    • 1/2 cup cream cheese or requeijão
    • Salt and pepper to taste
    • 2 tablespoons chopped parsley
  • For the Egg Wash:
    • 1 egg yolk
    • 1 tablespoon milk

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
    • Add the eggs and cold water, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant.
    • Add the shredded chicken, hearts of palm, green olives, corn, and peas. Stir to combine.
    • Stir in the tomato paste and chicken broth. Cook for a few minutes until the mixture is well combined and slightly thickened.
    • Add the cream cheese or requeijão, and mix until melted and incorporated. Season with salt and pepper to taste. Stir in the chopped parsley. Remove from heat and let the filling cool.
  3. Assemble the Empadão:
    • Preheat your oven to 375°F (190°C).
    • Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion on a floured surface to fit a 9-inch pie dish, allowing some overhang.
    • Transfer the rolled dough to the pie dish, pressing it gently into the bottom and sides. Trim any excess dough.
    • Fill the crust with the cooled chicken mixture.
    • Roll out the second portion of dough to cover the top of the pie. Place it over the filling and trim any excess dough. Pinch the edges to seal and crimp decoratively.
  4. Apply the Egg Wash:
    • In a small bowl, whisk together the egg yolk and milk. Brush the egg wash over the top of the pie.
  5. Bake the Empadão:
    • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
    • Remove from the oven and let it cool for a few minutes before serving.
  6. Serve:
    • Slice the Empadão and serve warm. It can be enjoyed on its own or with a side salad.

  • Cold Ingredients: Ensure the butter and water are cold when making the dough to achieve a flaky crust.
