Feijoada is one of Brazil’s most beloved and iconic dishes. This hearty stew, made with black beans, a variety of meats, and spices, is typically served with rice, collard greens, and orange slices. Originating from the time of slavery, feijoada has become a symbol of Brazilian cuisine and is enjoyed by families and friends during festive gatherings. Here’s a traditional recipe to help you make Brazilian Feijoada at home.

Ingredients:

  • For the Feijoada:
    • 500 g (1 lb) dried black beans
    • 2 tablespoons vegetable oil
    • 1 large onion, chopped
    • 4 cloves garlic, minced
    • 200 g (7 oz) smoked bacon, diced
    • 200 g (7 oz) Portuguese sausage (linguiça), sliced
    • 200 g (7 oz) pork ribs, cut into pieces
    • 200 g (7 oz) beef jerky (carne seca), soaked overnight and cubed
    • 200 g (7 oz) smoked ham hock
    • 2 bay leaves
    • Salt and pepper to taste
    • Water (enough to cover the beans and meat)
  • For the Accompaniments:
    • White rice
    • Collard greens, sautéed with garlic
    • Orange slices
    • Farofa (toasted cassava flour)

Instructions:

  1. Prepare the Beans:
    • Rinse the dried black beans under cold water and place them in a large bowl. Cover with water and let them soak overnight.
  2. Cook the Meat:
    • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
    • Add the diced bacon, Portuguese sausage, pork ribs, and beef jerky. Cook until the meats are browned and starting to render their fat.
  3. Add the Beans:
    • Drain the soaked black beans and add them to the pot with the meat. Pour in enough water to cover the beans and meat.
    • Add the smoked ham hock and bay leaves. Bring to a boil, then reduce the heat to low and let it simmer for about 2-3 hours, or until the beans are tender and the meats are cooked through.
  4. Season and Thicken:
    • As the feijoada simmers, check occasionally and add more water if necessary to keep the beans covered.
    • Season with salt and pepper to taste. If the stew is too thin, use a ladle to remove about a cup of beans, mash them, and stir back into the pot to thicken the broth.
  5. Prepare the Accompaniments:
    • Cook the white rice according to package instructions.
    • Sauté collard greens with garlic in a bit of oil until tender and bright green.
    • Slice the oranges into wedges.
    • Toast the cassava flour in a dry pan until golden brown for farofa.
  6. Serve:
    • Serve the feijoada hot, accompanied by white rice, sautéed collard greens, orange slices, and farofa. Enjoy this hearty and flavorful Brazilian dish with family and friends.
