Croatian Recipe: Palačinke (Croatian Crepes)

Palačinke are Croatian-style crepes that are thin, light, and versatile. They can be filled with a variety of sweet or savory fillings, making them perfect for breakfast, dessert, or even a light meal. Some popular fillings include jam, Nutella, cheese, or spinach.

Ingredients

For the Crepes:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • Butter or oil for cooking

For the Filling:

  • Jam, Nutella, cheese, or any filling of your choice

For Serving:

  • Powdered sugar
  • Fresh fruit (optional)
  • Whipped cream (optional)

Instructions

Preparing the Crepe Batter

  1. Mix Dry Ingredients: In a large mixing bowl, combine the flour and salt.
  2. Add Wet Ingredients: In a separate bowl, beat the eggs. Add the milk, water, and melted butter, and mix well.
  3. Combine Ingredients: Gradually add the wet ingredients to the dry ingredients, whisking continuously until the batter is smooth and free of lumps. Let the batter rest for at least 30 minutes.

Cooking the Crepes

  1. Heat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
  2. Cook the Crepes: Pour a small amount of batter (about 1/4 cup) into the pan, swirling it to evenly coat the bottom. Cook for about 1-2 minutes, until the edges start to lift and the bottom is lightly browned. Flip the crepe and cook for another 1-2 minutes on the other side. Remove the crepe and repeat with the remaining batter, greasing the pan as needed.

Filling the Crepes

  1. Add the Filling: Spread your desired filling (jam, Nutella, cheese, etc.) over one side of the crepe.
  2. Fold the Crepes: Fold the crepe in half, then in half again to form a triangle, or roll it up like a cylinder.

Serving the Palačinke

  1. Plate the Crepes: Arrange the filled crepes on a serving plate.
  2. Garnish and Serve: Dust the crepes with powdered sugar and serve with fresh fruit and whipped cream if desired. Enjoy the Palačinke warm.
