Soparnik is a traditional Croatian dish from the Dalmatian region, specifically from the Poljica area. It is a savory pie made with a thin dough filled with Swiss chard, onions, and garlic. Soparnik is often baked in a wood-fired oven and is known for its delicious, simple flavors.

Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup lukewarm water (more if needed)

For the Filling:

  • 1 large bunch Swiss chard (about 500 grams), washed and chopped
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Topping:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (optional)

Instructions

Preparing the Dough

  1. Mix the Dough: In a large mixing bowl, combine the flour and salt. Add the olive oil and lukewarm water. Mix until a dough forms.
  2. Knead the Dough: Turn the dough out onto a floured surface and knead for about 10 minutes, until it becomes smooth and elastic.
  3. Rest the Dough: Place the dough in a greased bowl, cover with a damp cloth, and let it rest for at least 30 minutes.

Preparing the Filling

  1. Prepare the Chard: In a large bowl, combine the chopped Swiss chard, onions, minced garlic, olive oil, salt, and pepper. Mix well to combine.

Assembling the Soparnik

  1. Divide the Dough: Divide the dough into two equal portions. Roll out each portion into a thin circle on a floured surface, about the size of your baking pan.
  2. Fill the Dough: Place one rolled-out dough circle on a lightly greased baking sheet. Spread the chard mixture evenly over the dough, leaving a small border around the edges.
  3. Cover with Dough: Place the second rolled-out dough circle over the filling. Press the edges together to seal the pie.

Baking the Soparnik

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Bake the Pie: Bake the Soparnik in the preheated oven for about 30-35 minutes, or until the crust is golden brown and crisp.

Topping the Soparnik

  1. Prepare the Topping: In a small bowl, mix the olive oil and minced garlic.
  2. Brush the Pie: Once the Soparnik is baked, remove it from the oven and brush the top with the garlic-infused olive oil. Sprinkle with chopped parsley if desired.

Serving the Soparnik

  1. Slice and Serve: Let the Soparnik cool slightly before slicing into wedges. Serve warm or at room temperature.
