Despite its name, Moravský Vrabec (Moravian Sparrow) is not made with sparrow but with tender, flavorful pieces of pork, typically served with dumplings and sauerkraut. Ingredients:

  • 2 lbs (900g) pork shoulder or pork belly, cut into bite-sized pieces

  • 1 tablespoon ground paprika
  • 2 tablespoons vegetable oil

  5. Roast the Pork:
    • Transfer the skillet or roasting pan to the preheated oven. Roast for about 1.5 to 2 hours, or until the pork is tender and the onions are caramelized, stirring occasionally.

    • Serve the Moravský Vrabec hot, accompanied by bread dumplings and sauerkraut.
