Ingredients

  • 2 large beets, cooked and diced
  • 3 large potatoes, cooked and diced
  • 2 hard-boiled eggs, chopped
  • 1 small onion, finely chopped
  • 3-4 pickles, diced
  • 1 apple, peeled and diced
  • 1/2 cup cooked and diced carrots (optional)
  • 1/2 cup peas (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • Salt and pepper to taste

Instructions

Preparing the Ingredients

  1. Cook the Beets and Potatoes:

    • Transfer the eggs to a bowl of ice water to cool, then peel and chop them.
