Ingredients:
- 500g phyllo dough (filo pastry)
- 500g feta cheese
- 250g cottage cheese
- 4 eggs
- 200ml sour cream
- 200ml sparkling water
- 100ml vegetable oil
- Salt to taste
- Butter for greasing the pan
Instructions:
- Prepare the Cheese Mixture:
- In a large bowl, crumble the feta cheese and mix it with the cottage cheese. Beat the eggs and add them to the cheese mixture along with the sour cream. Mix well until all ingredients are combined.
- Prepare the Phyllo Dough:
- Preheat your oven to 180°C (350°F). Grease a large baking pan with butter.
- Lay a sheet of phyllo dough in the bottom of the pan, letting the edges hang over the sides. Brush with vegetable oil. Repeat this process with about half of the phyllo sheets, brushing each layer with oil.
- Assemble the Gibanica:
- Spread half of the cheese mixture evenly over the phyllo layers.
- Layer another series of phyllo sheets on top of the cheese mixture, brushing each layer with oil as before.
- Pour the sparkling water evenly over the pie to add fluffiness.
- Fold the overhanging edges of the phyllo dough over the top of the pie. Brush the top with oil.
- Bake the Gibanica:
- Place the pan in the preheated oven and bake for about 45 minutes to 1 hour, or until the top is golden brown and crisp.
- Serve:
- Let the gibanica cool slightly before cutting into squares. Serve warm or at room temperature, as a standalone dish or with a side of yogurt.
