Ingredients:

  • 1 lb (450g) beef ribeye or sirloin, thinly sliced
  • 1 large onion, thinly sliced
  • 2 cups dashi (Japanese soup stock)
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons sugar
  • 2 tablespoons sake
  • 4 cups steamed rice
  • 2 green onions, chopped (for garnish)
  • Pickled ginger (beni shoga) for serving (optional)
  • 4 eggs (optional)

Instructions:

Preparing the Beef and Sauce:

  1. Prepare the Ingredients:
    • Thinly slice the beef and onion.
  2. Make the Sauce:
    • In a large saucepan, combine the dashi, soy sauce, mirin, sugar, and sake. Bring to a simmer over medium heat, stirring to dissolve the sugar.

Cooking the Gyudon:

  1. Cook the Onions:
    • Add the sliced onions to the saucepan and simmer until they are soft and translucent, about 5-7 minutes.
  2. Add the Beef:
    • Add the thinly sliced beef to the saucepan, spreading it out so it cooks evenly. Simmer for 5-7 minutes, or until the beef is cooked through.
  3. Optional Egg Topping:
    • If you prefer, you can poach the eggs in the simmering broth. Carefully crack the eggs into the saucepan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Serving:

  1. Prepare the Bowls:
    • Divide the steamed rice among four bowls.
  2. Top with Beef and Onions:
    • Spoon the beef and onions over the rice, along with some of the flavorful broth.
  3. Garnish:
    • Garnish with chopped green onions and pickled ginger if desired.
  4. Add the Egg:
    • If using, place a poached egg on top of each bowl.
