Japanese Classic: Okonomiyaki

Okonomiyaki is a popular Japanese savory pancake that can be customized with various ingredients. The name “okonomiyaki” means “grilled as you like it,” reflecting its versatility. Typically made with a batter of flour, eggs, and cabbage, and topped with a variety of savory ingredients, this dish is a favorite street food and a fun meal to prepare at home.

Ingredients:

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup dashi (Japanese soup stock) or water
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

For the Filling:

  • 2 cups cabbage, finely shredded
  • 1/2 cup green onions, chopped
  • 1/2 cup tenkasu (tempura bits)
  • 1/2 cup cooked bacon or pork belly, sliced into small pieces
  • 1/2 cup shrimp or squid, chopped (optional)

For Topping:

  • Okonomiyaki sauce (store-bought or homemade)
  • Japanese mayonnaise
  • Bonito flakes (katsuobushi)
  • Aonori (dried seaweed powder)
  • Pickled ginger (beni shoga)

Instructions:

Preparing the Batter:

  1. Mix the Batter:
    • In a large mixing bowl, combine the flour, dashi or water, eggs, salt, and baking powder. Mix until smooth.

Preparing the Filling:

  1. Add Ingredients:
    • Add the shredded cabbage, green onions, tenkasu, cooked bacon or pork belly, and shrimp or squid (if using) to the batter. Mix until all ingredients are well incorporated.

Cooking the Okonomiyaki:

  1. Heat the Griddle:
    • Heat a griddle or large non-stick frying pan over medium heat and lightly oil it.
  2. Cook the Pancakes:
    • Pour a portion of the batter onto the griddle, spreading it into a round pancake about 1/2 inch thick. Cook for about 4-5 minutes on each side, or until the pancake is golden brown and cooked through. Repeat with the remaining batter.

Topping the Okonomiyaki:

  1. Add Toppings:
    • Transfer the cooked pancakes to serving plates. Drizzle with okonomiyaki sauce and Japanese mayonnaise. Sprinkle with bonito flakes, aonori, and pickled ginger.
