Ingredients:

For the Rice:

  • 2 cups short-grain white rice
  • 2 1/2 cups water

For the Toppings:

  • 1 cup bean sprouts

  • 1 zucchini, julienned
  • 1 cup spinach leaves
  • 4-6 shiitake mushrooms, sliced
  • 1 cup kimchi, chopped
  • 4 eggs
  • 1/2 lb (225g) beef, thinly sliced (optional)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

For the Gochujang Sauce:

  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon water
  • 1 teaspoon rice vinegar

Instructions:

Preparing the Rice:

  1. Cook the Rice:
    • Rinse the rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot and cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is tender.

Preparing the Toppings:

  1. Cook the Vegetables:
    • Blanch the bean sprouts and spinach separately in boiling water for 1-2 minutes, then drain and squeeze out excess water. Season with a little sesame oil, minced garlic, salt, and pepper.
    • In a skillet, heat some vegetable oil over medium heat. Sauté the julienned carrots and zucchini separately until tender, about 2-3 minutes each. Season with salt and pepper.
    • Sauté the sliced shiitake mushrooms in the same skillet until tender, about 3-4 minutes. Season with soy sauce and sesame oil.
  2. Cook the Beef (Optional):
    • In the same skillet, heat a little vegetable oil and sauté the thinly sliced beef until cooked through, about 3-4 minutes. Season with soy sauce, minced garlic, salt, and pepper.
  3. Fry the Eggs:
    • In a non-stick skillet, heat a little vegetable oil over medium heat and fry the eggs sunny-side-up or to your preference.

Preparing the Gochujang Sauce:

  1. Mix the Sauce:
    • In a small bowl, combine the gochujang, sesame oil, sugar, water, and rice vinegar. Mix until smooth.

Assembling the Bibimbap:

  1. Assemble the Bowls:
    • Divide the cooked rice among serving bowls. Arrange the seasoned vegetables, kimchi, and cooked beef (if using) on top of the rice.
  2. Add the Egg:
    • Place a fried egg on top of each bowl.
  3. Serve with Sauce:
    • Drizzle the gochujang sauce over the top or serve it on the side for each person to mix in.:
