Korean Classic: Japchae (Stir-Fried Glass Noodles)

Japchae is a popular Korean dish made with stir-fried glass noodles, vegetables, and sometimes meat, all tossed in a savory-sweet sauce. This colorful and flavorful dish is perfect for any occasion. Follow this recipe to create authentic Japchae at home.

Ingredients:

For the Noodles:

  • 8 oz (225g) sweet potato glass noodles (dangmyeon)

For the Stir-Fry:

  • 1/2 lb (225g) beef or pork, thinly sliced (optional)
  • 1 large carrot, julienned
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 bunch spinach, blanched and squeezed dry
  • 4-5 shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon black pepper

Instructions:

Preparing the Noodles:

  1. Cook the Noodles:
    • Cook the sweet potato glass noodles according to the package instructions. Drain and rinse with cold water. Cut the noodles into shorter lengths and set aside.

Preparing the Stir-Fry:

  1. Cook the Meat (if using):
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the thinly sliced beef or pork and cook until browned and cooked through. Remove from the skillet and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and cook until fragrant. Add the julienned carrot, sliced onion, red bell pepper, yellow bell pepper, and shiitake mushrooms. Stir-fry until the vegetables are tender-crisp, about 5-7 minutes.
  3. Add the Spinach:
    • Add the blanched spinach to the skillet and stir to combine.

Preparing the Sauce:

  1. Mix the Sauce:
    • In a small bowl, combine the soy sauce, sugar, sesame oil, sesame seeds, and black pepper. Mix until the sugar is dissolved.

Assembling the Japchae:

  1. Combine Ingredients:
    • Add the cooked noodles and meat (if using) to the skillet with the vegetables. Pour the sauce over the top and toss everything together until well combined and heated through.
  2. Add Green Onions:
    • Add the chopped green onions and toss to combine.

Serving:

  1. Serve Hot:
    • Transfer the Japchae to a serving dish and garnish with additional sesame seeds if desired. Serve hot.
