Mustikkapiirakka, or Finnish Blueberry Pie, is a delightful dessert that features a buttery crust filled with fresh, juicy blueberries. This pie is simple to make and is often enjoyed with a scoop of vanilla ice cream. Here’s how to make it:

Ingredients:

For the Crust:
  • 200g all-purpose flour
  • 100g cold butter, cubed
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons cold water
For the Filling:
  • 500g fresh blueberries
  • 100g sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
For Serving:
  • Vanilla ice cream
  • Fresh mint, for garnish

Instructions:

  1. Prepare the Crust:
    • In a mixing bowl, combine the flour, sugar, and salt.
    • Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
    • Gradually add cold water, one tablespoon at a time, and mix until the dough comes together.
    • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Filling:
    • In a large bowl, combine the fresh blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix gently to coat the blueberries evenly.
  3. Assemble the Pie:
    • Preheat your oven to 200°C (400°F).
    • On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
    • Transfer the rolled dough to the pie dish, pressing it gently into the bottom and sides.
    • Pour the blueberry filling into the crust, spreading it out evenly.
  4. Bake the Pie:
    • Bake the pie in the preheated oven for about 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
    • If the edges of the crust start to brown too quickly, cover them with aluminum foil.
  5. Cool and Serve:
    • Allow the pie to cool on a wire rack for at least 1 hour before serving.
    • Serve slices of the blueberry pie with a scoop of vanilla ice cream and garnish with fresh mint.
