Cranachan is a traditional Scottish dessert that is simple yet indulgent, often enjoyed during festive occasions like Burns Night. This dessert features layers of fresh raspberries, toasted oats, whipped cream, honey, and a touch of whisky, creating a delightful balance of flavors and textures.
Ingredients
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) rolled oats
- 2 tbsp honey
- 2 tbsp whisky (optional)
- 1 cup (150g) fresh raspberries
- Additional raspberries and oats for garnish
- Mint sprig for garnish (optional)
Instructions
- Prepare the Oats:
- In a dry skillet, toast the oats over medium heat until they are golden brown and fragrant, about 5 minutes. Stir frequently to avoid burning. Once toasted, set aside to cool.
- Whip the Cream:
- In a large bowl, whip the heavy cream until it forms soft peaks. Gently fold in the honey and whisky, being careful not to deflate the cream.
- Layer the Cranachan:
- In serving glasses, layer the dessert by starting with a spoonful of toasted oats, followed by a layer of whipped cream, then fresh raspberries. Repeat the layers until the glass is full, finishing with a layer of whipped cream.
- Garnish:
- Top each glass with a few whole raspberries, a sprinkle of toasted oats, and a drizzle of honey. Add a sprig of mint for a fresh touch if desired.
- Serve:
- Serve immediately, or refrigerate for a short time if you prefer a chilled dessert.
