Introduction

Cranachan is a traditional Scottish dessert that is simple yet indulgent, often enjoyed during festive occasions like Burns Night. This dessert features layers of fresh raspberries, toasted oats, whipped cream, honey, and a touch of whisky, creating a delightful balance of flavors and textures.

Ingredients

  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) rolled oats
  • 2 tbsp honey
  • 2 tbsp whisky (optional)
  • 1 cup (150g) fresh raspberries
  • Additional raspberries and oats for garnish
  • Mint sprig for garnish (optional)

Instructions

  1. Prepare the Oats:
    • In a dry skillet, toast the oats over medium heat until they are golden brown and fragrant, about 5 minutes. Stir frequently to avoid burning. Once toasted, set aside to cool.
  2. Whip the Cream:
    • In a large bowl, whip the heavy cream until it forms soft peaks. Gently fold in the honey and whisky, being careful not to deflate the cream.
  3. Layer the Cranachan:
    • In serving glasses, layer the dessert by starting with a spoonful of toasted oats, followed by a layer of whipped cream, then fresh raspberries. Repeat the layers until the glass is full, finishing with a layer of whipped cream.
  4. Garnish:
    • Top each glass with a few whole raspberries, a sprinkle of toasted oats, and a drizzle of honey. Add a sprig of mint for a fresh touch if desired.
  5. Serve:
    • Serve immediately, or refrigerate for a short time if you prefer a chilled dessert.
