Ingredients

  • 1.5 lbs flank steak or skirt steak
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1/4 cup tomato paste
  • 1 cup beef broth
  • 1/2 cup dry white wine
  • 1/4 cup green olives, sliced
  • 2 tablespoons capers (optional)
  • 1 bay leaf
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped, for garnish
  • Cooked white rice for serving

Instructions

Preparing the Beef

  1. Cook the Beef:
    • In a large pot, add the flank steak or skirt steak and cover with water.
    • Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the beef is tender and easily shreds with a fork.
    • Remove the beef from the pot, let it cool slightly, then shred it using two forks. Set aside the shredded beef.

Cooking the Ropa Vieja

  1. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the sliced onions and bell peppers, and sauté until they become soft and translucent.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add the Tomatoes and Spices:
    • Stir in the chopped tomatoes, tomato paste, ground cumin, dried oregano, smoked paprika, and bay leaf.
    • Cook for about 5 minutes, allowing the flavors to meld.
  3. Add the Liquids and Beef:
    • Pour in the beef broth and white wine, and bring the mixture to a simmer.
    • Add the shredded beef, sliced olives, and capers (if using).
    • Season with salt and pepper to taste.
  4. Simmer the Stew:
    • Reduce the heat to low, cover the skillet, and let the stew simmer for about 20-30 minutes, stirring occasionally, until the flavors are well combined and the sauce has thickened.

Serving

  1. Garnish and Serve:
    • Remove the bay leaf from the stew.
    • Garnish the Ropa Vieja with chopped fresh cilantro.
    • Serve hot with cooked white rice and fried plantains on the side.
