  • 2-3 Scotch bonnet peppers, chopped (adjust for heat)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon ground crayfish (optional)
  • 1 teaspoon ground uziza seeds (optional)
  • 1 teaspoon ground ehuru (calabash nutmeg)
  • 2-3 bouillon cubes
  • 6 cups water or broth
  • Salt to taste
  • Fresh basil or scent leaves for garnish

Instructions

Preparing the Ingredients

  1. Clean and Cut the Meat or Fish:
    • If using meat, cut it into bite-sized pieces.
    • If using fish, clean and cut it into steaks or large chunks.
  2. Blend the Peppers and Aromatics:
    • In a blender, combine the Scotch bonnet peppers, garlic, ginger, and half of the chopped onion.
    • Blend until smooth and set aside.

Cooking the Soup

  1. Sauté the Onions:
    • In a large pot, heat a small amount of oil over medium heat.
    • Add the remaining chopped onion and sauté until translucent.
  2. Add the Meat or Fish:
    • Add the meat or fish to the pot and cook for a few minutes, turning to brown on all sides.
  3. Add the Blended Mixture:
    • Pour the blended pepper mixture into the pot and stir to combine.
    • Cook for 5-10 minutes to allow the flavors to meld.

    • Add the ground crayfish, ground uziza seeds, ground ehuru, and bouillon cubes.
    • Pour in the water or broth and stir well.
    • Bring the soup to a boil, then reduce the heat and let it simmer for 30-45 minutes, or until the meat is tender. If using fish, simmer for 20-30 minutes.
  5. Adjust Seasoning:
    • Taste the soup and adjust the seasoning with salt if needed.
